Abstract: The main bioactive compounds (carotenoids, ascorbic acid, vitamin E, phenolic compounds, proanthocyanidins and tannins), phytonutrients, factors affecting bioactive compounds (genetic factors, cultural practices and environmental conditions, and storage and processing) of Prunus species are discussed.
