| dc.description | This review provides a comprehensive examination of the production methods and key characteristics of white brine cheeses originating from Eastern Mediterranean countries. Based on findings from sources including scientific articles, and scholarly books, the study explores the traditional and modern techniques used in the production process of these cheeses. In addition, the organoleptic properties of Mediterranean white brine cheeses are examined, highlighting their unique flavors and textures. The implications of this research extend to various stakeholders in the dairy industry, including the primary sector, fostering a deeper understanding of the cultural and economic importance of these iconic cheeses. Overall, this review contributes to the existing body of knowledge on Mediterranean culinary traditions and provides valuable insights for future research as well as development in the field of science and technology of these products. | en_US |
| dc.description.abstract | Αυτή η ανασκόπηση παρέχει μια ολοκληρωμένη εξέταση των μεθόδων παραγωγής και των βασικών χαρακτηριστικών των λευκών τυριών άλμης που προέρχονται από χώρες της Ανατολικής Μεσογείου. Βασιζόμενη σε ευρήματα πηγών, συμπεριλαμβανομένων επιστημονικών άρθρων, και επιστημονικών βιβλίων, η μελέτη διερευνά τις παραδοσιακές και σύγχρονες τεχνικές που χρησιμοποιούνται στην παραγωγική διαδικασία αυτών των τυριών. Επιπλέον, εξετάζονται οι οργανοληπτικές τους ιδιότητες των μεσογειακών λευκών τυριών άλμης, τονίζοντας τις μοναδικές γεύσεις και τις υφές τους.
