Αρχικά πραγματοποιεί μια ιστορική αναδρομή της πορείας του καφέ και στην συνέχεια περιγράφονται συνοπτικά η ανατομία του καρπού του καφέ και τα οργανοληπτικά χαρακτηριστικά του καβουρδισμένου καφέ. Επίσης αναφέρονται οι ποικιλίες του καφέ , η καλλιέργεια και οι τρόποι συγκομιδής του . Ακολούθως αναλύονται οι τρόποι επεξεργασίας, δηλαδή η μέθοδος της υγρής επεξεργασίας και της ξηρής επεξεργασίας. Ύστερα, γίνεται μια εκτενής αναφορά στην μικροβιολογική κοινότητα που αφορά τον καφέ και στις κύριες μυκοτοξίνες που απασχολούν τους παραγωγούς, δηλαδή στις Αφλατοξίνες και τις Ωχρατοξίνες . Τέλος παρουσιάζεται η νομοθεσία που εφαρμόζεται στα τρόφιμα, σχετικά με την περιεκτικότητα τους σε μυκοτοξίνες. | Description: | In the present work, a detailed presentation of coffee and its microbiology is made. Initially, a historical review of the course of the coffee is made and then the anatomy of the coffee bean and the organoleptic characteristics of the roasted coffee are briefly described. Coffee varieties, cultivation and harvesting methods are also mentioned. Then the processing methods are analyzed, namely the method of wet treatment and dry treatment. Then there is an extensive report on the microbiological community of coffee and the main mycotoxins that coffee producers dealing with, namely aflatoxins and ochratoxins.
