dc.descriptionIn the present study are mentioned historical events of Cyprus and other Mediterranean countries. It also mentions the vine varieties of Cyprus that are winemaking to date so native as well as foreign varieties endured in time with a pattern of Cypriot wine streets on a map. Then the reaction of both alcoholic and malolactic fermentation in wine is explained. Then there is a reference to how white and red vinification is made, giving details of the ingredients of wine with an emphasis on phenolic and volatile ingredients, with references to the effect of wine on health. In addition, the methods of characterization and separation of wine with labeling on their historical background, their authorities and instruments including, such as HPLC, Gas Chromatography (GC-MS, GC-FID) and AAS (AES, ICP-MS) are given. Finally, there is a differentiation based on phenolic components, volatiles and chemical content, in different countries such as Brazil, China, Italy and South Africa.en_US
dc.description.abstractΣτην παρούσα μελέτη αναφέρονται ιστορικά γεγονότα της Κύπρου για το κρασί και άλλων μεσογειακών χωρών. Επίσης, αναφέρονται οι ποικιλίες αμπέλου της Κύπρου που είναι οινοποιήσιμες μέχρι και σήμερα τόσο γηγενείς όσο και ξένες, που άντεξαν στο χρόνο με υπόδειγμα δρόμων του κρασιού της Κύπρου σε χάρτη. Στη συνέχεια, εξηγείται η αντίδραση τόσο της αλκοολικής όσο και της μηλογαλακτικής ζύμωσης στο κρασί. Έπειτα, δίνεται αναφορά πως γίνεται η λευκή και ερυθρή οινοποίηση, και έτσι δίνονται λεπτομερώς τα συστατικά του οίνου με έμφαση στα φαινολικά και πτητικά συστατικά, με αναφορές της επίδρασης του κρασιού στην υγεία. Επιπλέον, δίνονται οι μέθοδοι χαρακτηρισμού και διαχωρισμού του κρασιού με έμφαση στο ιστορικό υπόβαθρο ανακάλυψης τους, την αρχή τους και τα όργανα που περιλαμβάνουν όπως HPLC, Gas Chromatography (GC-MS, GC-FID) και AAS(AES,ICP-MS). Τέλος, γίνεται μια διαφοροποίηση με βάση τα συστατικά των φαινολών, των πτητικών και της περιεκτικότητας σε χημικά στοιχεία, σε διάφορες χώρες όπως Βραζιλία, Κίνα, Ιταλία και Νότιος Αφρική.en_US
