Τα σταφύλια και οι οίνοι περιέχουν φαινολικές ενώσεις οι οποίες είναι φυσικά αντιοξειδωτικά. Συγκεκριμένα χωρίζονται σε φλαβονοειδείς φαινόλες (φλαβανόλες, φλαβονόλες, τανίνες και ανθοκυανίνες) και μη φλαβονοειδείς φαινόλες (κινναμωνικά οξέα και βενζοϊκά οξέα). Η αντιοξειδωτική δράση των φαινολών οφείλεται στην ιδιότητα τους να εξουδετερώνουν τις ελεύθερες ρίζες. Οι συνηθέστερες μέθοδοι που χρησιμοποιούνται για τον προσδιορισμό των φαινολικών συστατικών είναι η μέθοδος DPPH, η μέθοδος Folin – Ciocalteu, η μέθοδος FRAP και η μέθοδος TEAC. Για αυτές τις μεθόδους χρησιμοποιείται συνήθως η τεχνική της HPLC. | Description: | In the present study has characterized the Cypriot wines and varieties based on the phenolic components and their antioxidant action. Grapes and wines contain phenolic compounds that are natural antioxidants. In particular, they are divided into flavonoid phenols (flavanols, flavonols, tannins and anthocyanins) and non-flavonoid phenols (cinnamic acids and benzoic acids). The antioxidant activity of phenols compounds is due to their ability to neutralize free radicals. The most common methods used to determine the phenolic components are the DPPH method, the Folin - Ciocalteu method, the FRAP method and the TEAC method.
