Η πήξη του γάλακτος αλλά και τα φυσικοχημικά και οργανοληπτικά χαρακτηριστικά των τυριών που παρήχθηκαν με την χρήση της φυτικής πυτιάς Cynzime® και της CHY-MAX®Powder Plus NB περιγράφονται στην εργασία. Ως γενικό συμπέρασμα προκύπτει ότι το «Τυρί Σχάρας» έχει πολλά κοινά χαρακτηριστικά με το Χαλλούμι και η συγκεκριμένη πυτιά φυτικής προέλευσης θα μπορούσε να χρησιμοποιηθεί για την παραγωγή τυριών με την συγκεκριμένη τεχνολογία. | Description: | In this project, the effect of a different type of rennet was studied when producing cheeses of the same technology i.e. Halloumi and “Grilled cheese”. In detail, goat milk was used to make the cheeses by using the plant rennet Cynzime® for “Grilled Cheese” and CHY-MAX®Powder Plus NB for Halloumi. Studies included milk coagulation, physico-chemical and organoleptic characteristics of the end-products. It could be concluded that “Grilled Cheese” was very similar to Halloumi in terms of organoleptic and other physical characteristics.
