| dc.description | Commandaria is a sweet dessert wine delivered from sun-dried grapes of the indigenous cultivars ‘Xinisteri’ and ‘Mavro’. The wine history of Cyprus is inextricably aligned with Commandaria, a protected Designation of Origin (PDO) product. The aim of this dissertation was the review of historical data, methods of preparation and description of the legal framework governing the production of Commandaria. Based on its technical file, the production of Commandaria has very narrow limits and method of preparation and can be produced only in the 14 villages of the province of Limassol, while only its bottling is allowed to take place elsewhere. Most commercial labels of Commandaria use a mixture of the two cultivars but their ratio differs, depending on the availability of each cultivar every year. Each winery follows its means of dehydration as well as of aging process. In addition, the present study refers to other sweet wines produced globally that resemble Commandaria, either in the way they are made or in their sugar content. | en_US |
| dc.description.abstract | Η Κουμανδαρία είναι ένα γλυκό επιδόρπιο κρασί που παράγεται από λιαστά σταφύλια τα οποία προέρχονται από τις γηγενείς ποικιλίες ‘Ξυνιστέρι’ και ‘Ντόπιο Μαύρο’. Η αμπελοοινική ιστορία της Κύπρου είναι άρρηκτα συνδεδεμένη με την ιστορία της Κουμανδαρίας, η οποία αποτελεί Προϊόν Ονομασίας Προέλευσης. Ο σκοπός της παρούσας διατριβής ήταν η βιβλιογραφική ανασκόπηση ιστορικών δεδομένων, μεθόδων παρασκευής και περιγραφή του νομοθετικού πλαισίου που διέπει την παραγωγή Κουμανδαρίας. Με βάση και τον τεχνικό της φάκελο, η παραγωγή Κουμανδαρίας έχει πολύ στενά όρια και τρόπο παρασκευής και μπορεί να παραχθεί μόνο στα 14 χωριά της ορεινής επαρχίας Λεμεσού, ενώ μόνο η εμφιάλωση της επιτρέπεται να γίνει σε άλλο μέρος. Αναφορικά με την Κουμανδαρία, συνήθως στις πλείστες ετικέτες χρησιμοποιείτε μείγμα των δύο ποικιλιών αλλά η αναλογία διαφέρει αναλόγως την χρονιά και την διαθεσιμότητα της παραγωγής. Τέλος, γίνεται αναφορά σε ορισμένες ετικέτες Κουμανδαρίας αναφορικά με τον τρόπο λιάσματος των σταφυλιών, την επιλογή του μείγματος των ποικιλιών, τον τρόπο παλαίωσης και άλλες παραμέτρους. Επιπρόσθετα, η παρούσα διατριβή κάνει αναφορά σε γλυκά κρασιά που παράγονται σε άλλες χώρες και που προσομοιάζουν με την Κουμανδαρία, είτε στον τρόπο παρασκευής τους είτε στην περιεκτικότητα τους σε σάκχαρα. | en_US |
